Absolutely everything. We were treated like royalty as soon as we walked in the door. The staff are first class. Alessandro in the Bar Room pours the best guiness and makes a mean old fashioned! The grounds are gorgeous, our room was beautiful and the food exceptional. We had to leave early on our last day and the kitchen made us a pack of food and a coffee for the car. Now that's going above and beyond. Thank you

The Dunboyne Castle Hotel has a lovely calm and welcoming ambiance. It was a highlight of our visit to Ireland. I hadn't been to Kilkenny for a good number of years and I was blown away by how pretty and accessible the town was. We were there at Halloween so it was very atmospheric, ghost tour was great too. There were so many interesting shops and lovely restuarants, Paris Texas was particularly good. ALL the bars were great with music most nights, Fields and Matt Millars were particularly good. I'm thinking of going back again for the christmas markets.

The best way to describe Waterford is it's in transition. There's lots of building work being done, I'm sure in 5 years it'll be fabulous, just now it's decrepit. If you're on the hunt for beggars of hostile migrants then head for Waterford it's a world leader.

If you are looking for cutting-edge city life, this is not for you. Dundalk is a former railway town, largely built round the (now defunct) works for the GNRI and with much 19th century red-brick architecture. It has a busy high street with a lot of small shops, pubs and restaurants, none are grand, it reminds me of similar towns in the UK before planning blight took hold. A lot of effort seems to have gone into smartening the place up in recent years, which is nice. Would that other towns of its scale have survived so well it would be nothing exceptional, but as so few have, it has a real charm. As a base, it is well sited to explore the countryside around, which has a long and interesting history, with a lot of historic sites.
